Selling charity cards made by people with dementia

Hi everyone!
I work as a Dementia Activities Coordinator with a small charity in Southeast London. We run an art group for people living with dementia and their carers. We're thinking about selling cards made using participants' artwork. To keep things simple, we'd like to sell them in person at markets and similar events (as opposed to online).
We have two questions which I'm hoping others who have done this before might be able to help with:
  1. Intellectual property: We want to make sure we have consent from the artists themselves, as well as potentially from their next of kin given participants' dementia diagnosis. Does anyone know what that process might look like/ any useful templates? 
  2. Financials: Because we'll only be selling a small batch of cards and trading turnover would not go over £80k, I'm assuming we'd be tax exempt (based on this info from NCVO), and also not need to be VAT registered - am I correct?
Any advice and ideas are very welcome!
