Advice on paying a CIC founder a salary

Im the director of a CIC (ltd by shares) (we converted from a Ltd company so were told we could not change the ltd by type).
Can anyone explain to me: why is ltd by shares viewed to different to ltd by guarantee? Can we put something in to our articles that effectively cuts off the difference of shares and makes it the same as guarantee?
we are a leads generation service for midwives that work outside of the NHS and an education and support service for families. we need to get support for website, advertising and marketing - are there any funds you can suggest that are good options for us.
Lastly - we seem to get confused for statutory services and denied funding from some sources - the whole reason we are trying to get the word out there is because all of the services we provide are NOT provided in the statutory system. It is on its knees. How can i evidence this best?
