Mersey Counselling and Therapy Centre

Can anyone advise me on this please? We are ony tiny, 3 employees. One was a lady who opened up our centre and closed it at night. The building was not open at all for 12 months, then she moved and didn't want to come in the dark, so we kept her on until the end of furlough, topping up her pay to 100% then she left at the end of September. She's just come back ot me saying her last pay slip states 69 days holiday pay owing. We never had a discussion around taking holiday when she was on furlough. I just assumed 18 months pay for not working would be enough! Sigh. I've looked at gov advice and asked our payroll software provider for advice but I guess i need to know are we legally obliged to pay her anything? Does anyone have any knowledge around this? Her contract states she should take her holiday within each holiday period of 1 Jan to 31 Dec. Thank you for any advice.
