How do you evidence volunteer hours?

Hi all,
Just wondering if any volunteer coordinators or the like use a specific method to document volunteer hours to then utilise in stats for funding and promotion etc. I want to record for the last 12 month period so if anyone has done a similar piece of work or has any ideas that would be great.
