How to set up a non profit in the UK (LTD with Shares, LTD with Guarantee, CIC, CIO)?

I am the founder (UK based) of DataAndTechAid.com (D.A.T.A.) our mission is to bring the global data and tech communities together to raise money to buy first aid kits for the citizens of Ukraine.  So far we have raised $105,000 in 6 weeks from a combination of corporate and personal donations.  We would like to set up a legal entity and bank account to allow us more flexiblity to pay for costs (contractors, and social media, etc).  I understand that a registered charity will take a long time to set up, so would like to set up an interim solution like an LTD.  Should i set up an LTD with shares or Guarantee which I can later convert to a CIC or CIO?
