Which non profit or charity structure should I choose so I have control and also can pay myself a salary in the future

Hi
I am looking at setting up a mental health charity in the Liverpool area and am stuck on what is the best type of structure to go for. 
I want to be in charge and have control over the operation but would like to have a board of people to vote on things. 
I am more interested in keeping control long term rather than taking a wage but if the charity does get to where I want it to be then I think its fair for me to take a wage after a couple of years of my doing it voluntarily and when is has proved a success and can afford to do so. 
I have looked into it a bit and so far am I right in saying I could set up an charity with a trustee board with me as the head chair getting to steer the charity, appoint trustees, set the topics for discussion and voting and the general day to day running of things on a volunteer basis for the first few years. 
Then when the charity is a success and hopefully gets to the stage were it is not viable for me to do it volunteering on a part time basis and a full time CEO is needed, can I then apply for the paid role of CEO through a fair and transparent process and then if I get the position resign as head chair. 
If this does happen do I then loose my position as founder and become simply an employee who can be fired and then have no role at the charity I started up ? 
also if I did do this who would become head chair of the board and would they then have the power to replace me?
