Difference between Director (Founder) and Employee for a CIC

I have a situation that I'm unclear on. A Founder is the only salaried person in the CIC. It's PAYE as a regular monthly salary payment. In terms of employment, should they have an Employment Contract or are they technically the Director of the CIC and therefore, an Office Holder and doesn't require an Employment Contract? The reason I've fallen down this rabbit hole is because the organisation may take on a second paid person, as a part time employee, and I'm looking at the Employment Contract we would have in place for that person with holiday allowance, absence policy, assets policy, expenses policy, etc.. And that got me thinking, should the Founder also have an employment contract? Feedback welcomed!
