Would like to hear from other charities that rely on staff to support at events, and whether they offer these hours back as time off in lieu or ask staff to volunteer their time voluntarily?

We always try to organise events and activities during our normal working hours, and when that's not possible we always offer TOIL as events are work after all! Our approach is very flexible in general so people can leave early or swap days (we're all part-time) and that's been working well in my experience.

Everywhere I've worked has always offered TOIL in I've worked at events outside normal working hours and to me, that feels fair.  I don't mind working a few evenings or occasional weekends, if I know I'll get the time back later.  However, if I was expected to do this as well as my normal working hours without TOIL, I wouldn't take too kindly to it I'm afraid!  And would feel my employer were taking advantage of me.  And from working in this sector for many, many years, I think that TOIL is probably the accepted way, either written or unwritten.  Most staff in this sector go above and beyond anyway so expecting even more probably wouldn't go down at all well!

We have a flexible working policy that means we can choose to either shift our working hours around events, or get the time back as TOIL. We keep our team calendar updated with everyone's hours/movements & this works really well for us.
We also use BrightHR to log & book TOIL

Those staff members who are expected to have to work evenings or weekends have that written into their contracts. Others with 'normal' office hours get 1:1 TOIL.

We get TOIl for working events outside of our normal working hours / days. It is usually on an hour for hour basis ie if your event takes you 6 hours - you will get 6 hours back. However, when it involves all staff involvement, eg London Marathon - where we man cheer points and have post race reception - staff are given a day 1/2 in TOIL - rather than hour for hour. This has been commented on by staff to management - as its at a weekend and hours away from home generally equate to nearly 2 days so I think they may look at it in future. 
On occasion, staff can choose to take their TOIL as pay - if for example it would mean they were out of the office too much and needed to get some work done etc. Hope this helps!

Our policy is that if staff choose to attend a fund-raising event as a paying guest (a concert for instance), they are not expected to help at the event as they are there to enjoy the occasion free of any responsibilities and there will be nothing to identify them as a staff member to the wider public. For staff who have volunteered to help with the practicalities of an event, or their role requires them to attend, they will be visible as staff and therefore will be "in role" and working. They are given TOIL for the event and for any time given to the event preparation such as purchasing refreshments in their own time. We are a small staff team (9 people but less than 6 WTE) so I stress to staff that they are not expected to attend every event, we try to share them out as fairly as possible and  ensure that staff, trustees and volunteers are properly thanked when they do help.

In a previous role we relied heavily on staff to support events. Each member of the staff team (including clinical frontline staff) was offered a day's volunteering a year ot support events, and were acitvely encouraged to support. They were given like for like TOIL in return. It worked out well, we had staff who regularly volunteered and it had hte added bonus of building strong bonds across the orgnisation nad deepending understanding of exactly what other teams work involved and how critical events work to supporting the frontline work.

Same here - mainly TOIL, occasionally we offer them to be paid (at usual hourly rate) if we are really busy and but often they prefer to take TOIL.

The charities I have worked with which really value their staff have provided either TOIL or have paid staff at events (not necessarily at overtime rates).
If a charity is large enough to be able to employ staff, they can certainly afford to provide either of these options.
