Can we create our own documents for a trustee appointment? (Anonymous post 🤫)

We are a small group of acupuncturists working with an American charity to offer acupuncture to local communities. We target those that have been displaced by war, are suffering economic strife and those experiencing conflict wether at home or through war. We support their mental health and physical health via acupuncture.
We would like to become more official within the U.K. and I believe this means setting up as a new charity. At present we have donations sent via a global giving page which goes directly to the states, they then take a 15% admin fee. Our invoices for supplies goes straight to the states.
Is this straight forward (once we have found 3 trustees) as the charity is already functioning in the states successfully?
